The ideal rice for sushi, according to Japanese ideas, is a short-grain rice because it is sticky after cooking and thus holds its shape. It is firm to the bite and at the same time so soft that it melts on the tongue when eaten. After cooking, it has a pleasant aroma and a slightly sweet taste. The rice grain is shiny.
Where does this Koshikari rice come from?
This rice is produced in Italy according to original Japanese production methods and is equivalent to Japanese qualities. It is also used by Japanese chefs in Germany.
Preparation Cook rice:
For about 2.5 cups of cooked rice
- Wash rice carefully in cold water to remove excess starch.
- In a medium-sized pot, mix 1 cup of rice and 1.5 cups of water and bring to a gentle boil.
- Reduce heat and simmer with lid for about 20 minutes until all the liquid has evaporated.
- Remove the pot from the stove and let it stand covered for 10 minutes.
When using a rice cooker:
Add 1 cup of rice with 1.5 cups of water to the rice cooker and continue according to the rice cooker's instructions.
Preparation Season rice:
Sushi rice must be seasoned after cooking. For this, you can use a ready-seasoned sushi vinegar, e.g., the Otafuku rice vinegar. Or you can use a neutral unseasoned grain vinegar like Mizkan Kokumotsu Sushi Su and add sugar and salt yourself.
