Shiitake mushrooms (Lentinula edodes) are popular edible mushrooms in Asia, used as frequently as champignons are in Europe. They have been cultivated in East Asia for centuries. They are valued for their rich, savory flavor and meaty texture.

The mushroom has a lot of umami and is therefore one of the three main sources of umami in Japanese cuisine: kombu, bonito, and shiitake. All three umami sources complement each other synergistically, meaning they mutually enhance the umami of the dish.

Shiitake mushrooms come in many different sizes. The dried mushrooms we offer are very large and thick and are suitable for extracts.
