Description Shio Chan Ponzu
Shio Ponzu is an exceptional variant of the traditional Japanese Ponzu sauce. It combines the freshness of various Japanese citrus fruits with the full umami flavor of Rishiri seaweed from northern Hokkaido as well as smoked bonito. The base is created by processing dashi (from katsuobushi and kombu) with mirin before being refined with a composition of daidai, yuzu, yuko, sudachi, and kabossu juice. The salt comes directly from the clear Kumano Sea and harmoniously rounds off the sauce.
Compared to the product Chanponzu, Shio Chan Ponzu is somewhat saltier. The color of this ponzu is light, whereas "normal" ponzus are dark brown due to the soy sauces contained in them.
Usage
Shio Ponzu is excellent as a topping for sashimi or as a refined marinade. The sauce pairs particularly well with light meat and fish varieties such as pork, chicken, shrimp, crab, and scallops. About the Manufacturer
Marusho was founded in 1879 in the late Edo period and has since produced finest Japanese vinegar and ponzu. Of particular importance for the quality of their products is the soft water from the Kumano Mountains, which they use for brewing. The maturation of the vinegars takes place traditionally in wooden barrels made from Kumano cedar trees. In the 1980s, contact was established with Michio Kushi, a Japanese nutritionist who shaped the macrobiotic movement.
