The risotto rice Carnaroli is a long-grain rice that is wonderfully suitable for risotto. Carnaroli rice grains are very rich in amylose, a type of starch that ensures a perfect balance between good absorption capacity of liquids and low starch loss during cooking. Therefore, it remains rather al dente when cooked, as is desired for risotto rice. The rice grains also retain their original shape after cooking.
Carnaroli is one of the most highly valued Italian rice varieties worldwide due to its excellent cooking resistance and its ability to absorb flavors and spices exceptionally well.
About the manufacturer
Gabriele Ferron comes from a family that has been processing rice since 1650. In his youth, he worked in various restaurants in the province of Verona and developed a great passion for the regional cuisine of Veneto. Afterwards, he dedicated himself to the family business and specialized in ancient rice varieties such as Vialone Nano and Carnaroli.
He recognized that the old rice varieties of Veneto were endangered and promoted the establishment of a consortium to protect the Vialone Nano Veronese rice.
The original rice milling factory from 1650 is still in operation today.

Carnaroli rice does not need to be washed before cooking. Its cooking time is 18-20 minutes.
