The Balsamico Condiment Vecchio Ducato No. 4 from the vinegar manufactory Casa Mussini in Modena in Emilia Romagna is a so-called white balsamic dressing with a bright amber color. The light color comes from the white grapes used. The taste is fruity-sweet and sour with a noticeable but pleasant acidity.
As a high-quality balsamic, the condiment Vecchio Ducato was also aged in oak barrels and decanted three times during the aging process. This gives it a velvety consistency and vanilla notes.
About the manufacturer
The Mussini family has been creating balsamic vinegars for generations. According to family history, it was Guido Mussini, born around 1885, who founded the tradition of balsamic vinegar. The first barrels for vinegar aging were purchased at the beginning of 1909. Over several decades, Guido and his wife Cesira developed their own knowledge and methods but limited sales only to relatives. The two world wars initially interrupted further development. After the Second World War, production could then be further expanded.
The successors of Guido and Cesira, however, pursued different career paths, and according to local customs, the vinegar barrels with the maturing vinegars were divided among them as inheritance. It was only around the turn of the millennium that Giorgio and Gabriele Mussini brought as many as possible back together and founded the present-day Acetaia Mussini. Meanwhile, Mussini balsamics are sold in many countries.
